Mini Banana Bread Pancakes

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder
  • blue spirulina powder (optional)

Garnishes

  • blueberries
  • nut butter
  • yoghurt

Preparation

  1. Mash the banana with a fork, beat the egg, and mix all ingredients except the garnishes.

  2. Heat a non-stick pan and pour the batter using a teaspoon to form mini pancakes; optionally add a small amount of coconut oil.

  3. Cook each side until golden-brown.

  4. Optionally, add blue spirulina powder to a portion of the batter for blue pancakes.

  5. After cooking, top with blueberries and yoghurt.

  6. Drizzle nut butter over the pancakes.
