Mini Banana Bread Pancakes
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
- blue spirulina powder (optional)
Garnishes
- blueberries
- nut butter
- yoghurt
Preparation
Mash the banana with a fork, beat the egg, and mix all ingredients except the garnishes.
Heat a non-stick pan and pour the batter using a teaspoon to form mini pancakes; optionally add a small amount of coconut oil.
Cook each side until golden-brown.
Optionally, add blue spirulina powder to a portion of the batter for blue pancakes.
After cooking, top with blueberries and yoghurt.
Drizzle nut butter over the pancakes.
