Vegan Almond Butter and Chia Jam Pancakes

Ingredients

  • 1 banana (mashed)
  • 2 tablespoons ground flaxseed meal
  • 1 cup organic buckwheat flour
  • 2 scoops vegan strawberry jam protein powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1 tablespoon ACV
  • 1 1/2 cups almond milk

Chia jam

  • 3/4 cup frozen mixed berries
  • 2 tablespoons chia seeds

Preparation

  1. Mash the banana in a bowl

  2. In a separate bowl, combine dry ingredients: ground flaxseed meal, buckwheat flour, vegan protein powder, cinnamon, and baking powder

  3. Add wet ingredients: mashed banana, ACV, and almond milk to the dry ingredients and mix until smooth

  4. Heat a non-stick pan or griddle over medium heat and lightly grease it

  5. Pour batter onto the pan to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown

Chia jam making

  1. Place 3/4 cup of frozen mixed berries in a small saucer and heat for 5 minutes with 2 tablespoons of water

  2. Mash the berries with a fork

  3. Add 2 tablespoons of chia seeds, mix everything together, and keep on low heat for 5 more minutes
