Roast Romanesco with Coriander Marinade
Ingredients
- 1 Romanesco
- 4 tablespoons Extra Virgin Olive Oil
- Handful of coriander
- 2-4 cloves garlic
- 2 red chillis
- Juice and rind of 1 small lime
- Salt to taste
Preparation
Mix the marinade ingredients.
Drizzle the marinade over the whole Romanesco, saving a little for later.
Cover with foil and bake in the oven at 180°C for about 45 minutes until soft and tender.
Leave uncovered for the last 10 minutes of baking.
Drizzle with the reserved marinade and enjoy.
Tips
This recipe works well with cauliflower or broccoli too.
Romanesco is a nutritious cruciferous vegetable high in vitamins C, A, K, folate, and fiber, good for gut health.
It can be a great addition to Christmas dinner or served as the main dish.
