Zucchini Avocado Pistachio Dip
Ingredients
- 2 medium zucchinis
- Half a large avocado or 1 medium avocado
- Garlic to taste (e.g., half a large clove)
- Juice of one lime
- Handful of pistachio nuts or pine nuts
- Handful of fresh coriander
- Salt to taste
- 2 tablespoons extra virgin olive oil
- Bit of water as needed
Preparation
Chop the zucchini and other ingredients if necessary to facilitate blending
Blend the zucchini, avocado, garlic, lime juice, coriander, salt, and olive oil together until smooth
Add a bit of water to help with mixing and achieve the desired consistency.
Top with crushed pistachios and additional coriander leaves.
