Green Pea and Avocado Pesto Pasta
Ingredients
- 1 garlic clove
- 1 avocado
- 2 tablespoons lemon juice
- 1/4 cup pine nuts
- Handful of basil leaves
- 1 cup green peas (defrosted)
- 1/3 cup vegan parmesan or 3 tablespoons nutritional yeast
- 1/4 cup plus 2 tablespoons water
- Salt and black pepper to taste
- 8 ounces pasta
Preparation
Blend the garlic, avocado, lemon juice, pine nuts, basil leaves, green peas, vegan parmesan or nutritional yeast, water, salt, and pepper on high until smooth.
Cook pasta according to package instructions
Drain the pasta and toss with the pesto mixture
Top with almond ricotta and dulse sprinkles
