Vegan Green Pesto for Pasta Dishes

Ingredients

  • 2 cups fresh basil leaves (4oz)
  • 1 cup fresh parsley
  • 1 garlic clove
  • 1/2 cup nutritional yeast
  • 1/4 cup pine nuts
  • 1/4 cup virgin olive oil
  • 1 Tbsp lemon juice
  • 1/2 tsp salt

Preparation

  1. Blend all ingredients until creamy.

  2. Use a few tablespoons of hot pasta water to smoothen the pesto before mixing with the pasta.
