Grilled Corn with Avocado Crema

Ingredients

  • corn (quantity not specified)
  • salt (for boiling water)
  • avocado oil
  • 1 large avocado
  • 1/4 cup canned full fat coconut milk
  • 2 tablespoons extra virgin olive oil
  • juice of 1 lime
  • 1/4 teaspoon sea salt
  • 1 jalapeño or Serrano pepper (optional)
  • 1 tablespoon fresh cilantro

Preparation

  1. Boil the corn in salted water for a couple of minutes to keep it moist and speed up the grilling process.

  2. Dry the corn well.

  3. Brush with a little avocado oil and grill.

  4. Blend all the avocado crema ingredients together.
