Grilled Corn with Avocado Crema
Ingredients
- corn (quantity not specified)
- salt (for boiling water)
- avocado oil
- 1 large avocado
- 1/4 cup canned full fat coconut milk
- 2 tablespoons extra virgin olive oil
- juice of 1 lime
- 1/4 teaspoon sea salt
- 1 jalapeño or Serrano pepper (optional)
- 1 tablespoon fresh cilantro
Preparation
Boil the corn in salted water for a couple of minutes to keep it moist and speed up the grilling process.
Dry the corn well.
Brush with a little avocado oil and grill.
Blend all the avocado crema ingredients together.
