Vegan Fall Lunch with Beans and Vegetables
Ingredients
- 1 can diced tomatoes
- 1 can black beans
- 2 medium red potatoes
- 4 small bok Choy stalks
- 2 cups spinach
Seasonings
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp turmeric
- 1/2 tsp pink Himalayan salt
- 1 tsp sugar
- 1 tbsp oregano
- 1/2 tbsp basil
- 1/2 tbsp thyme
- 3 shakes paprika
- 1 shake nutmeg
- Pepper to taste
Toppings
- hummus
Preparation
Throw together the ingredients and seasonings.
Top with hummus and stir in.
Serve and enjoy.
