Vegan Fall Lunch with Beans and Vegetables

Ingredients

  • 1 can diced tomatoes
  • 1 can black beans
  • 2 medium red potatoes
  • 4 small bok Choy stalks
  • 2 cups spinach

Seasonings

  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp turmeric
  • 1/2 tsp pink Himalayan salt
  • 1 tsp sugar
  • 1 tbsp oregano
  • 1/2 tbsp basil
  • 1/2 tbsp thyme
  • 3 shakes paprika
  • 1 shake nutmeg
  • Pepper to taste

Toppings

  • hummus

Preparation

  1. Throw together the ingredients and seasonings.

  2. Top with hummus and stir in.

  3. Serve and enjoy.
