Bubble Gum Chocolate Cheesecake
Ingredients
Base
- 1 cup oat flour
- 1 cup grated almonds
- 1/4 cup maple syrup
- 3 tbsp cocoa
- pinch of Himalayan salt
- 2 spoons of coconut oil
- a little water
Filling
- 1/2 cup of red currants
- 1/2 cup mixed summer berries
- 1 cup of thick yoghurt of your choice
- 1 spoon of cashew butter (optional)
- 1 tbsp Berrylicious Blend and 1 spoon Pink Pitaya @unicornsuperfoods
- 1 tbsp of tapioca flour
- 1 tbsp of agar agar
Preparation
Mix all base ingredients and put in the fridge for at least 30 minutes.
Blend the fruits for the filling.
Mix all filling ingredients and boil for 1 minute.
Wait until the mixture reaches room temperature.
Pour the filling over the base.
Leave in the fridge for a few hours to set.
