Salted Toffee Apple Magnums

Ingredients

  • ICECREAM • 2 chopped red apples
  • • 1 cup coconut milk (The thick part from the top of the can)
  • • 1 tsp vanilla bean paste • 1 tbsp raw coconut butter
  • • Pinch of cinnamon
  • #TOFFEE • 8 medjool dates (pitted)
  • • 1 tbsp maple syrup
  • • 1/4 tsp pink Himalayan salt
  • • 4 tbsp oat milk • 1 tsp vanilla extract • 1 tbsp raw coconut butter 〰️
  • #CHOCOLATE • 100g vegan chocolate • 1/4 cup flaked almonds

Preparation

  1. Blend all toffee ingredients until smooth and set aside

  2. Blend all icecream ingredients until smooth

  3. Get 4 magnum silicone moulds (with wooden popsicle sticks inserted)

  4. Half fill the moulds with the icecream mix and freeze for one hour

  5. Add a tablespoon of toffee on top of each magnum and fill the moulds up with more Apple icecream

  6. Freeze for at least 6 hours or overnight

  7. Melt the chocolate and stir in the almonds

  8. Remove the icecream from the moulds and dip them in chocolate
