Chewy Chai Vanilla Cookies

Ingredients

  • 2 1/2 cups ground almonds
  • 1/4 cup coconut flour
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp cardamom
  • 1 tsp baking powder
  • 1 tsp vanilla paste (or extract)
  • 1/3 cup maple syrup
  • 1/3 cup melted coconut oil
  • 1 flaxseed egg (1tbsp flaxseed mixed with 3 tbsp water)

Preparation

  1. Preheat the oven to 180 degrees Celsius and line a baking tray with baking paper

  2. In a bowl, mix together the ground almonds, coconut flour, baking powder & spices

  3. Add all the wet ingredients and mix well

  4. Leave the cookie dough in the fridge for 30 mins then yield into 12-16 cookies depending on size

  5. Bake for 10 mins then leave to cool and ENJOY
