Vegan Cookie Dough Stufed Easter Eggs
Ingredients
- 1 can chickpeas, washed + drained
- 3 tbsp maple syrup (or more if using an unsweetened nut butter)
- 1/2 tsp vanilla essence
- few tbsp ground almonds (maybe 4 tbsp?)
- 1/2 pack vegan mylk chocolate chips
- stir through the chocolate chips
- roll into egg shapes (i made 8 in total)
- 1 tsp (unflavoured) coconut oil
Preparation
Melt the chocolate and coconut oil in a bain-marie of the microwave until smooth
Dip the chickpea cookie dough eggs in the chocolate (i found the easiest way was to use a large spoon, dunk it in, roll it around, scoop out) and place on a lined baking tray (with parchment paper)
Once you’ve coated all of them, place in the fridge until the chocolate is set
Enjoy !! i kept mine in the fridge but you could also freeze them (these are addictive and so good so they probs won’t last long !!!!)
