Browned Coconut Butter Chocolate Chip Cookies

Ingredients

  • 1 1/4 cups rolled oats, gluten free if desired or 1 heaping cup fine oat flour
  • 1/2 cup browned coconut butter
  • 1/2 cup maple syrup
  • 1/2 tsp blackstrap molasses, optional
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 cup non-diary chocolate chips

Preparation

  1. Browned Coconut Butter

  2. Place 4 cup large flaked unsweetened coconut in a large saucepan over low heat and toast until it turns a golden brown. Remove from heat and cool completely. When cool add to a food processor and process until coconut butter forms. Store in a glass jar

  3. Add rolled oats to a food processor and process until a fine flour forms, or if you are using oat flour, skip this step! Add all ingredients except chocolate chips to a large bowl and mix until a crumbly cookie dough forms

  4. Fold in chips and scoop cookies onto parchment lined pan

  5. Place plan in the freezer for 10 minutes to let them set

  6. Take your baking pan directly from the freezer and place them in your preheated oven to bake for 12-15 minutes
