Snack Balls with Dates and Pistachios
Ingredients
- 10-12 medjool dates
- 2 tbsp cacao powder
- 1 drop lemongrass extract concentrate
- 1 cup pistachios
- 1/4 cup almond milk
Preparation
Soak 10-12 medjool dates in hot water to soften and remove pits.
Ground pistachios in a food processor, using 1 cup and setting some aside for coating.
Combine all ingredients in a food processor to mix thoroughly.
Roll the mixture into balls and coat them in the reserved ground pistachios; use a dash of water if the balls feel dry and don't grip well.
Store the snack balls in the fridge for up to 1 week.
Tips
You can substitute lemongrass extract with vanilla essence for a different flavor.
Use any preferred milk or water instead of almond milk if desired.
