Snack Balls with Dates and Pistachios

Ingredients

  • 10-12 medjool dates
  • 2 tbsp cacao powder
  • 1 drop lemongrass extract concentrate
  • 1 cup pistachios
  • 1/4 cup almond milk

Preparation

  1. Soak 10-12 medjool dates in hot water to soften and remove pits.

  2. Ground pistachios in a food processor, using 1 cup and setting some aside for coating.

  3. Combine all ingredients in a food processor to mix thoroughly.

  4. Roll the mixture into balls and coat them in the reserved ground pistachios; use a dash of water if the balls feel dry and don't grip well.

  5. Store the snack balls in the fridge for up to 1 week.

Tips

  1. You can substitute lemongrass extract with vanilla essence for a different flavor.

  2. Use any preferred milk or water instead of almond milk if desired.
