Peanut Butter Protein Balls
Ingredients
- 1 cup peanut butter
- 1/3 cup honey
- 2/3 cup almond meal
- pinch salt (optional)
- crushed pistachios
Preparation
Mix all ingredients except for pistachios and refrigerate for 30 minutes
Line a tray or plate with wax paper
Roll the peanut butter mixture into walnut-sized balls. If the mixture sticks to your hands, add a little more almond meal until it stops sticking.
Transfer the balls to the prepared baking sheet and refrigerate for 15 minutes, then re-roll for perfectly round balls, or skip this step if shape is not important.
Coat the balls in pistachios.
Seal in an airtight container and store in the fridge or freezer.
