Easy Vegan Chocolate Mousse with Aquafaba
Ingredients
- One can of chickpeas (makes 1/2 cup of aquafaba)
- 4 tbsp melted coconut oil
- 4 tbsp raw cacao powder
- 4 tbsp maple syrup
- 1/2 tsp vanilla powder
Preparation
Put the aquafaba into a bowl and whisk until it is practically stiff.
In another bowl, mix all the other ingredients until well combined.
Let the chocolate mixture cool down, otherwise the beaten aquafaba will not stay fluffy.
Gently fold the beaten aquafaba into the chocolate mixture using a spatula.
Divide into two small cups and refrigerate for at least 30 minutes.
