Healthy Baked Cookie Dough
Ingredients
- 400g can chickpeas, washed & drained • 2-4 heaped tbsp nut butter (i normally use cashew or peanut)
- • 2 tbsp coconut sugar
- • 1-2 tbsp maple syrup • 1 tsp vanilla extract or vanilla powder • EITHER 2 heaped tbsp oats OR 1/4 cup ground almonds
- • dairy free chocolate chips (most dark choc ones are vegan) to taste (i normally add between 1/4-1/2 cup or ~80g)
Preparation
Blend all ingredients apart from the chocolate chips in a food processor until smooth, scraping down the sides as you go, keep it going until cookie dough consistency
Stir through choc chips -> refrigerate to store or eat straight away (if you want it as a dip don’t refrigerate as it will go hard)
OR bake it in an oven at fan 180 for ~5 mins until warmed through (v good with ice cream)
