Ingredients

  • 1 can chickpeas rinsed and dried⠀
  • 1/2 cup runny peanut butter⠀
  • 1/4 cup maple syrup⠀
  • 1 tsp vanilla⠀
  • 1 tbsp oat flour (unless you use non runny pb like jif)⠀
  • pinch of salt (only if your pb doesn't have it in it)⠀
  • Vegan Dark chocolate (ideally vegan choc drops if you can find them)⠀

How to steps

  1. Preheat oven to 375°⠀

  2. Rinse chickpeas with colander and lay flat on a sheet of paper towels, pat the top dry with more paper towels⠀

  3. Add all ingredients except chocolate in food processor, blend until smooth and starts to ball up

  4. You may need to stop every once in a while to scrape the sides down⠀

  5. Make quarter size balls and flatten with two fingers (these cookies will not raise or spread out so make them the shape you want)⠀

  6. Bake for 7-10 minutes and while they bake cut your choc into squares / drops⠀

  7. Take them out and add the drops ⠀

  8. This batch makes about 20 cookies⠀
