Classic German Jam-Filled Streusel Cookies
Ingredients
Dough
- 300 g all-purpose flour (Type 405)
- 120 g powdered sugar
- 1 packet bourbon vanilla sugar
- a pinch of salt
- 180 g cold butter
- 1 large egg
- 2 tablespoons water
Additional
- 250 g fruit jam, any flavor
- all-purpose flour, for dusting
Preparation
In a bowl, mix flour, powdered sugar, vanilla sugar, and salt
Add cold butter and egg
Knead quickly with hands until crumbly
Reserve one quarter of the dough and chill
Add water to the remaining dough and knead until smooth
Wrap in plastic wrap and chill for 30 minutes
Preheat oven to 180°C (350°F) conventional or 160°C (320°F) convection
Line a baking sheet with parchment paper
Roll out the chilled dough on a lightly floured surface to 3 mm thickness
Cut into squares or use a 3 cm diameter cookie cutter for circles
Place cookies on the prepared baking sheet
Smooth the jam and place a small dollop on each cookie, spreading slightly
Top each cookie with reserved streusel
Bake in the preheated oven for about 13 minutes until golden

Using the same dough for both the cookie base and streusel topping saves time and ensures perfect results
