Lamb Fatteh with Yogurt and Rice
Ingredients
- 1 kg cut lamb
- 2 small chopped onions
- 1 tsp whole black pepper
- 3 cinnamon sticks
- 2 bay leaves
- 1 tbsp salt
- 2 cups short grain rice
- 4 tbsp corn oil
- 2 tsp salt
- 3 cups meat broth
Yogurt mixture
- 4 cups yogurt
- 4 cloves crushed garlic
- 1 tsp salt
For serving
- toasted bread
- fried pine nuts
Preparation
Boil the meat in a large pot with about 2 liters of water, onion, whole black pepper, cardamom, bay leaves, and cinnamon sticks until done, then strain the meat and reserve the broth.
Heat oil in a medium pot, add rice and meat broth, cook the rice and set aside.
Sear the boiled meat in a skillet with oil or ghee and set aside.
In a serving dish, layer toasted bread, hot broth, and warm or hot rice.
Mix yogurt with crushed garlic and spread it over the rice.
Top with seared meat, fried pine nuts, and serve immediately.
