Baked Blueberry Squares with Tahini Lemon Drizzle
Ingredients
Dry
- 1 1/2 cups cake flour
- 2/3 cup coconut sugar
- Pinch of salt
- 1 1/2 teaspoons baking powder
- 1 cup fresh blueberries
Wet
- 1 cup plant-based milk
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla extract
- 1/2 cup melted coconut oil
Tahini drizzle
- 2 tablespoons tahini
- 2-3 tablespoons liquid sweetener such as maple syrup or agave
- 2-3 tablespoons lemon juice
- 2-3 tablespoons plant-based milk
Preparation
Preheat your oven to 180°C.
Mix together all the dry ingredients.
Add the wet ingredients and combine the mixtures.
Pour into an oiled baking dish and bake for 28-30 minutes.
While the squares are baking, mix the tahini drizzle ingredients together and adjust the sweetness to your taste.
Once the squares have cooled down, drizzle the tahini mixture over them and serve.
