Baked Fish with Potatoes and Spicy Sauce

Ingredients

  • 2 kg large fish
  • 10 medium potatoes
  • 1 large sweet red pepper slices
  • 1 large onion slices

Sauce

  • 1/2 cup olive oil
  • 2 cloves crushed garlic
  • 1 large chopped onion
  • 2 green chili peppers chopped
  • 1 cup chopped cilantro or parsley
  • 2 tablespoons tomato paste
  • 2 tablespoons vinegar
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ginger powder
  • 2 lemon slices

Preparation

  1. Heat the oven to 180 degrees and prepare a suitable baking dish.

  2. In a bowl, place all the spices and mix them together.

  3. In a saucepan, heat the olive oil and add the onion, garlic, green pepper, paste, vinegar, spices, parsley, stir the ingredients together then add a little water and let it simmer a bit.

  4. In the baking dish, place slices of onion and red pepper.

  5. Using a knife, cut the back of the fish several times and place the fish in the baking dish.

  6. Place the potatoes in a bowl then add two-thirds of the sauce amount, mix to combine then place it on the fish with some potatoes inside the fish.

  7. Spread the remaining sauce over the fish, add lemon slices, cover the baking dish and place it in the oven for 30 minutes.
