Baked Fish with Potatoes and Sauce

Ingredients

  • 2 kg large fish
  • 10 medium potatoes
  • 1 large sweet red pepper, sliced
  • 1 large onion, sliced

Sauce

  • 1/2 cup olive oil
  • 2 cloves garlic, crushed
  • 1 large onion, chopped
  • 2 green chili peppers, chopped
  • 1 cup chopped cilantro or parsley
  • 2 tablespoons tomato paste
  • 2 tablespoons vinegar
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ginger powder
  • 2 lemons, sliced

Preparation

  1. Preheat the oven to 180 degrees and prepare a suitable baking dish.

  2. In a bowl, place all the spices and mix them to combine.

  3. In a saucepan, heat the olive oil and add the onion, garlic, green pepper, tomato paste, vinegar, spices, parsley, mix the ingredients together then add a little water and let it simmer for a bit.

  4. In the baking dish, place slices of onion and red pepper.

  5. Using a knife, make several cuts on the back of the fish and place the fish in the baking dish.

  6. Place the potatoes in a dish, pour two-thirds of the sauce over them, mix to combine, then place them over the fish and put some potatoes inside the fish.

  7. Pour the remaining sauce over the fish, add lemon slices, cover the baking dish, and place it in the oven for 30 minutes.
