Baked Fish with Vegetables

Ingredients

  • 1 kg fish fillet
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fish spice
  • 1/4 teaspoon crushed chili
  • 1/4 teaspoon ground sumac
  • 3 tablespoons butter

Sauce

  • 2 tablespoons tomato paste
  • 2 cups water
  • 1 teaspoon salt

Vegetable mixture

  • 1 medium sweet green pepper, sliced
  • 1 medium sweet red pepper, sliced
  • 1 medium onion, sliced
  • 2 large potatoes, sliced
  • 1 medium lemon, sliced

Preparation

  1. Set the oven rack in the middle of the oven, preheat the oven to 180°C, and prepare a medium-sized oven dish suitable for serving.

  2. Place the fish in a wide dish and sprinkle with salt, pepper, fish spice, chili, and sumac, then mix the fish to coat with the spices.

  3. In a wide skillet, put the butter, place the skillet over medium heat, add the fish fillets, wait a few seconds until the bottom is golden, flip the fish to the other side using a wide metal spoon, and continue to gently turn the fish until it is golden all over.

  4. For the vegetable mixture, place the red pepper, green pepper, onion, potatoes, and lemon in the oven dish, then place the fish pieces on top of the vegetables.

  5. For the sauce, in a small bowl, put the tomato paste, water, and salt, stir with a fork to mix, pour the sauce over the vegetables and fish, and cover the dish with a piece of aluminum foil.

  6. Place the covered dish in the preheated oven and bake until the fish is cooked through and the vegetables are tender.
