Baked Fish with Vegetables
Ingredients
- 1 kg fish fillet
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon fish spice
- 1/4 teaspoon crushed chili
- 1/4 teaspoon ground sumac
- 3 tablespoons butter
Vegetable mix
- 1 medium green bell pepper, sliced
- 1 medium red bell pepper, sliced
- 1 medium onion, sliced
- 2 large potatoes, sliced
- 1 medium lemon, sliced
Sauce
- 2 tablespoons tomato paste
- 2 cups water
- 1 teaspoon salt
Preparation
Set the oven rack in the middle and preheat the oven to 180°C. Prepare a medium-sized oven dish suitable for serving.
Place the fish in a wide dish and sprinkle with salt, pepper, fish spice, crushed chili, and ground sumac. Mix to coat the fish with the spices.
In a wide pan, melt the butter over medium heat. Add the fish fillet and cook until the bottom is golden. Flip the fish using a wide metal spoon and continue cooking gently until golden on all sides.
For the vegetable mix, place the sliced red pepper, green pepper, onion, potatoes, and lemon in the oven dish. Arrange the fish pieces on top of the vegetables.
For the sauce, in a small bowl, combine tomato paste, water, and salt. Mix with a fork until well blended. Pour the sauce over the vegetables and fish. Cover the dish with aluminum foil.
