Baked Pumpkin Fries with Herb Yogurt Dip
Ingredients
- 1 Hokkaido pumpkin
- 3 tbsp olive oil
- 1 tbsp paprika powder
- Salt
- Pepper
Sauce
- 200g soy yogurt
- 2 tbsp olive oil
- 2 tbsp basil
- 3 tbsp freshly chopped mint
- 2 tbsp lemon juice
- Salt
- Pepper
Preparation
Preheat oven to 200 degrees Celsius with circulating air
Cut pumpkin into fries-sized pieces
Add to a bowl with olive oil and paprika powder
Put on a baking tray
Bake for 30 minutes
Season with salt and pepper
For the sauce, mix all ingredients together
