Baked Pumpkin Fries with Herb Yogurt Dip

Ingredients

  • 1 Hokkaido pumpkin
  • 3 tbsp olive oil
  • 1 tbsp paprika powder
  • Salt
  • Pepper

Sauce

  • 200g soy yogurt
  • 2 tbsp olive oil
  • 2 tbsp basil
  • 3 tbsp freshly chopped mint
  • 2 tbsp lemon juice
  • Salt
  • Pepper

Preparation

  1. Preheat oven to 200 degrees Celsius with circulating air

  2. Cut pumpkin into fries-sized pieces

  3. Add to a bowl with olive oil and paprika powder

  4. Put on a baking tray

  5. Bake for 30 minutes

  6. Season with salt and pepper

  7. For the sauce, mix all ingredients together
