Black Bean and Quinoa Burgers

Ingredients

  • 2, 15 oz cans of black beans⁣ rinsed and drained
  • 1 cup of cooked tri color quinoa⁣
  • 1/2 bell pepper (yellow, orange or red) loosely chopped⁣
  • 1/2 red onion loosely chopped⁣
  • 1 cup sliced mushrooms⁣
  • 2 tablespoons of ground flax⁣
  • 2 tablespoons of nutritional yeast⁣
  • 1 1/2 tbsp white miso paste⁣
  • 1 1/2 tsp onion powder⁣
  • 1 1/2 tsp garlic powder⁣
  • 1 1/2 tsp paprika⁣
  • 1 cup of bread crumbs (i used whole wheat)⁣
  • big handful of parsley⁣
  • avocado oil (or oil of choice)⁣

Preparation

  1. Preheat the oven to 400 degrees.⁣

  2. Place burger ingredients in a food processor and pulse and blend until well combined. You may need to scrape down the sides and continue to blend. The mixture should hold together and form patties. If it’s too wet add more bread crumbs, if it’s too dry add just a bit of water.⁣

  3. Line a baking sheet with parchment paper or lightly oil the sheet with avocado oil(or other oil of choice). Form 6 patties to fit the buns you are using. Lightly put some avocado oil (or other oil of choice) in your hands and rub oil on top of the burgers (you don’t need a ton, just lightly to coat so they brown nicely)⁣

  4. Bake for 10-12 minutes or until patties have a nice browning and crisp on top. Remove from the oven and flip. Place back in the oven for another 8-12 min or until patties form up. ⁣

  5. Remove from the oven and build your burger with your favorite buns and toppings⁣
