Chickpea Caesar Salad Wraps
Ingredients
- 1 can chickpeas, drained
- 1/2 honey crisp apple, chopped
- 1/2 bell pepper, chopped
- 1/4 red onion, finely chopped
- 1/2 cucumber, chopped
- 1/2 bunch parsley, chopped
- 1/2 cup sliced almonds
Vegan caesar dressing
- 1/4 cup water
- 2 tablespoons white miso paste
- 1 tablespoon tahini
- 2 teaspoons dijon mustard
- juice of 1.5 lemons
- 1 tablespoon nutritional yeast
- 1 teaspoon dried parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 2 teaspoons raw agave
Preparation
Add all ingredients for the salad to a large bowl and mix together.
Add ingredients for the Caesar dressing to a blender and purée until smooth and creamy. Let it sit for 5-10 minutes to thicken.
Pour the dressing over the salad ingredients and mix well to combine. It tastes best if made an hour or so in advance or the night before.
