Chickpea Caesar Salad Wraps

Ingredients

  • 1 can chickpeas, drained
  • 1/2 honey crisp apple, chopped
  • 1/2 bell pepper, chopped
  • 1/4 red onion, finely chopped
  • 1/2 cucumber, chopped
  • 1/2 bunch parsley, chopped
  • 1/2 cup sliced almonds

Vegan caesar dressing

  • 1/4 cup water
  • 2 tablespoons white miso paste
  • 1 tablespoon tahini
  • 2 teaspoons dijon mustard
  • juice of 1.5 lemons
  • 1 tablespoon nutritional yeast
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 2 teaspoons raw agave

Preparation

  1. Add all ingredients for the salad to a large bowl and mix together.

  2. Add ingredients for the Caesar dressing to a blender and purée until smooth and creamy. Let it sit for 5-10 minutes to thicken.

  3. Pour the dressing over the salad ingredients and mix well to combine. It tastes best if made an hour or so in advance or the night before.
