Favourite Sweet Treat
Ingredients
- 1 pack of filo pastry (ensure vegan)
- 1 cup of pistachios
- 1 cup of pecans
- 3/4 agave syrup
- 1/2 tsp cinnamon
- 1/4 tsp ground cardamom
- zest of a lemon
- zest of an orange
- pinch of salt
- 2 tbsp butter, melted
- sugar syrup:
- 6 tbsp maple syrup
- 3/4 cups water
- 1/2 tsp cinnamon
- squeeze of lemon juice
Preparation
Pre heat the oven to 175c
Begin by making the syrup, heat all the ingredients in a pan
Bring it to a boil and let simmer gently for 15 minutes until thick and sticky
Blitz the nuts into a fine ish crumble, reserve a little for sprinkling over the top at the end adding the rest to a bowl and add the rest of the filling ingredients except for the butter
Have a baking tray line with parchment ready, i used a small sized baking tray
Cut the filo pastry to the same size as the tray
Begin by layering one sheet and brushing it with melted butter and then add another and repeat the process three times and then gently spread a layer of the nut mixture on top and repeat

Once you have used up all the sheets and nut mixture, cut the baklava into slices and then bake in the oven for around 25 minutes, keeping an eye on them at the end
Once ready, remove from the oven and pour the syrup over them, being sure to let it spread through all the cracks and finishing with a sprinkle of chopped pistachios
Leave to cool before serving
