Oven Roasted Tofu and Potato Brunch Bowl

Ingredients

  • tofu
  • potatoes
  • arugula
  • rainbow micro greens
  • lemon juice
  • olive oil
  • sea salt
  • 1/2 avocado

Preparation

  1. Preheat oven to 200°C

  2. Roast tofu and potatoes in the oven until golden and tender, about 20-25 minutes

  3. In a bowl, combine arugula and rainbow micro greens

  4. Dress the greens with lemon juice, olive oil, and sea salt

  5. Add the roasted tofu and potatoes to the bowl

  6. Top with 1/2 avocado dressed with lemon juice, salt, and pepper

  7. Serve immediately
