Oven Roasted Tofu and Potato Brunch Bowl
Ingredients
- tofu
- potatoes
- arugula
- rainbow micro greens
- lemon juice
- olive oil
- sea salt
- 1/2 avocado
Preparation
Preheat oven to 200°C
Roast tofu and potatoes in the oven until golden and tender, about 20-25 minutes
In a bowl, combine arugula and rainbow micro greens
Dress the greens with lemon juice, olive oil, and sea salt
Add the roasted tofu and potatoes to the bowl
Top with 1/2 avocado dressed with lemon juice, salt, and pepper
Serve immediately
