Paleo Carrot Cake Muffins
Ingredients
- 1 cup almond flour
- 2 eggs
- 1/2 cup shredded carrots
- 2 tbsp melted coconut oil
- 2 tbsp honey
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp ginger
- sprinkle of salt.
- asy Topping
- 1 cup plain Greek yogurt + 1 tbsp honey + 1/2 tsp cinnamon
Preparation
Whisk the eggs first then add everything else in
Mix or blend together
Spray your muffin pan and bake at 350F for 18-20 mins
