M O R N I N G Muffins
Ingredients
- 1 apple shredded
- 2 carrots shredded
- 1 banana mashed
- 2 eggs
- 1/4 cup olive oil
- 2 tbsp honey {add more if you are on the sweeter side}
- 1 tsp vanilla
- 1 tsp baking soda
- 3/4 cup white or whole-wheat flour
- 3/4 cup rolled oats
- 1/4 tsp salt
- 1/2 cup walnuts
Preparation
Preheat oven to 350
Shred carrots, apple & mash banana {food processor makes this step very easy} in a large bowl
Add the rest of the ingredients & fold in 1/2 the walnuts
Scoop into a greased muffin tin & top with extra walnuts
Bake for 25 mins
