M O R N I N G Muffins

Ingredients

  • 1 apple shredded
  • 2 carrots shredded
  • 1 banana mashed
  • 2 eggs
  • 1/4 cup olive oil
  • 2 tbsp honey {add more if you are on the sweeter side}
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 3/4 cup white or whole-wheat flour
  • 3/4 cup rolled oats
  • 1/4 tsp salt
  • 1/2 cup walnuts

Preparation

  1. Preheat oven to 350

  2. Shred carrots, apple & mash banana {food processor makes this step very easy} in a large bowl

  3. Add the rest of the ingredients & fold in 1/2 the walnuts

  4. Scoop into a greased muffin tin & top with extra walnuts

  5. Bake for 25 mins
