Simple Seed Loaf
Ingredients
- 2 cups whole-wheat flour
- 1 cup rolled oats
- 3/4 cup sunflower + pumpkin seed mix plus extra for sprinkling
- 1/3 cup sesame seed + flaxseed mix plus extra for sprinkling
- 1/2 tsp baking soda
- 1 tbsp baking powder
- pinch salt
- 2 large eggs
- 1 1/2 cups oat milk
- 1 1/2 tbsp white vinegar
- 2 tbsp honey
Preparation
Preheat oven to 180°C and line a loaf tin with parchment paper
Combine the milk and vinegar in a medium size mixing bowl and set aside for 15 minutes
Place the seeds in a large frying pan over medium heat until they start to pop. Remove from heat and set aside
Sieve together the flour, baking powder, baking soda and salt in a large bowl. Add the oats and seeds and whisk to combine. Add the eggs and honey to your milk mixture and whisk to combine
Create a well in your dry ingredients and slowly add the wet ingredients. Fold to combine/
Pour into the loaf tin and sprinkle extra seeds (or oats) on top. Bake for 45 to 50 mins until golden and cooked when tested with a skewer
Allow to cool before turning onto a wire rack
