Simple Seed Loaf

Ingredients

  • 2 cups whole-wheat flour
  • 1 cup rolled oats
  • 3/4 cup sunflower + pumpkin seed mix plus extra for sprinkling
  • 1/3 cup sesame seed + flaxseed mix plus extra for sprinkling
  • 1/2 tsp baking soda
  • 1 tbsp baking powder
  • pinch salt
  • 2 large eggs
  • 1 1/2 cups oat milk
  • 1 1/2 tbsp white vinegar
  • 2 tbsp honey

Preparation

  1. Preheat oven to 180°C and line a loaf tin with parchment paper

  2. Combine the milk and vinegar in a medium size mixing bowl and set aside for 15 minutes

  3. Place the seeds in a large frying pan over medium heat until they start to pop. Remove from heat and set aside

  4. Sieve together the flour, baking powder, baking soda and salt in a large bowl. Add the oats and seeds and whisk to combine. Add the eggs and honey to your milk mixture and whisk to combine

  5. Create a well in your dry ingredients and slowly add the wet ingredients. Fold to combine/

  6. Pour into the loaf tin and sprinkle extra seeds (or oats) on top. Bake for 45 to 50 mins until golden and cooked when tested with a skewer

  7. Allow to cool before turning onto a wire rack
