Dark Chocolate Sandwich Cookies

Ingredients

  • 2 eggs
  • 200g honey
  • 100g oil of your choice
  • 230g whole grain flour
  • 2g baking soda
  • 3g baking powder
  • Pinch of salt
  • 1 tbsp cinnamon
  • Jam for sticking the cookies together
  • Dark chocolate
  • Shredded coconut

Preparation

  1. Preheat your oven to 210°C.

  2. Beat the eggs well in a mixing bowl, then mix in the honey and oil.

  3. Add the pre-sieved flour, baking soda, baking powder, salt, and cinnamon to the bowl. Mix everything together until well combined.

  4. Line a baking tray with baking paper. Use a spoon to form cookies on the tray, leaving enough space between each cookie.

  5. Bake the cookies for 9 minutes or until they turn golden brown.

  6. Allow the cookies to cool down on a rack.

  7. To make the sandwiches, spread jam of your choice on one cookie and place another cookie on top.

  8. Melt the dark chocolate in the microwave, being careful not to burn it. You can add some coconut oil to help it melt easier.

  9. Dip the cookies in the melted chocolate, then cover them in shredded coconut.

  10. Place the cookies in the fridge for a while to allow the chocolate to set.

  11. Enjoy your delicious sandwich cookies!
