Healthy Easy Lemon Blueberry Muffins!

Ingredients

  • 1 cup spelt flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • pinch of salt
  • 1/4 cup maple syrup
  • 1/2 cup oat milk
  • 3 tbsp tahini
  • 1 large lemon, juiced
  • 1 tsp vanilla
  • 1 banana, mashed
  • 3/4 cup fresh blueberries

Preparation

  1. Mix dry ingredients in stand mixer, add in all wet ingredients and mix well

  2. Fold in blueberries

  3. Pour batter into 6 large muffin cups

  4. Bake at 350f for 30 mins or till golden brown
