Fiber-Rich Morning Glory Muffins Recipe 🥕🍌🍎
Ingredients
- 3/4 cup GF rolled oats from @onedegreeorganics
- 3/4 cup 1:1 GF flour from @queenstreetbakery (or regular all-purpose flour)
- 1 tsp baking soda
- 1/4 tsp sea salt
- 2 tbsp unsweetened shredded coconut from @bobsredmill
- 2 carrots, shredded
- 1 apple, shredded
- 1 large banana, mashed
- 1/4 cup olive oil
- 2 eggs
- 2 tbsp honey
- 1 tsp vanilla
- Optional: nuts or raisins
Preparation
Preheat the oven to 350°F (175°C) and generously grease a muffin tin or use liners.
In a large bowl, combine the olive oil, eggs, honey, mashed banana, shredded carrot, shredded apple, and vanilla.
Stir in the rolled oats, GF flour, shredded coconut, baking soda, and sea salt until well mixed.
Scoop the batter into the muffin tin, filling each cup about 2/3 full. Optionally, sprinkle the tops with additional oats.
Bake the muffins in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Once baked, remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
