Raw Ginger Spiced Carrot Cake
Ingredients
- 1 cup raw pecans
- 2 tablespoons flax meal
- 1 tablespoon ginger powder
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/3 cup shredded coconut
- 12 medjool dates, pitted and diced
- 2 cups shredded carrots, packed
- 2 cups shredded apples, packed
- frosting:
- 1/2 cup coconut butter
- 1/2 cup raw agave
- 2 teaspoons vanilla extract
- 2 teaspoons fresh ginger, grated
Preparation
Blend your frosting ingredients altogether until a smooth, silky texture
Set this aside
After this, blend your pecans, flax meal, ginger, cinnamon, and nutmeg in a food processor until slightly coarse
In a separate bowl, place your dates, apples, figs, and carrots and toss together
Add this new mixture to your food processor and slightly toss before blending again
Finally, press your finished base batter into a square pan a nd firmly press it down
Pour the frosting on top, and place your cake in the refrigerator for at least an hour
