Roasted Corn and Jalapeño Sweet Corn Bread
Ingredients
- 1 cup corn masa flour or corn meal
- 1 cup whole wheat pastry flour
- 2 tsp baking powder
- 1/2 cup maple syrup
- 1/2 tsp salt
- 1 cup full fat coconut milk
- 1 cup unsweetened soy milk
- 2 tbsp vinegar
- 1/2 cup frozen fire roasted corn
- 1/2 tsp turmeric powder
- 1 jalapeño diced
Preparation
Preheat oven to 350F
In a medium bowl, combine all dry ingredients except corn and jalapeño
Add in remaining wet ingredients. With a spatula, stir to combine ingredients together. Do not over mix. Batter will be thick
Fold in corn and jalapeño then place batter into non-stick 8x8 pan (if needed grease to prevent sticking)
Place into oven and bake for 40-45 minutes
You can check to see if it is fully cook by poking the center with a toothpick (should come out clean). Allow to cool for at least 10 minutes. Enjoy
