Roasted Corn and Jalapeño Sweet Corn Bread

Ingredients

  • 1 cup corn masa flour or corn meal
  • 1 cup whole wheat pastry flour
  • 2 tsp baking powder
  • 1/2 cup maple syrup
  • 1/2 tsp salt
  • 1 cup full fat coconut milk
  • 1 cup unsweetened soy milk
  • 2 tbsp vinegar
  • 1/2 cup frozen fire roasted corn
  • 1/2 tsp turmeric powder
  • 1 jalapeño diced

Preparation

  1. Preheat oven to 350F

  2. In a medium bowl, combine all dry ingredients except corn and jalapeño

  3. Add in remaining wet ingredients. With a spatula, stir to combine ingredients together. Do not over mix. Batter will be thick

  4. Fold in corn and jalapeño then place batter into non-stick 8x8 pan (if needed grease to prevent sticking)

  5. Place into oven and bake for 40-45 minutes

  6. You can check to see if it is fully cook by poking the center with a toothpick (should come out clean). Allow to cool for at least 10 minutes. Enjoy
