Simple Vegan Scones

Ingredients

  • 475g self raising flour
  • 1/2 tsp salt
  • 50g caster sugar
  • 85g vegan butter
  • 240ml plant mylk
  • 1 tbsp apple cider vinegar
  • handful of raisins / sultanas

Preparation

  1. Preheat oven 200 C

  2. Mix the flour, sugar, salt

  3. Use a food processor to mix the butter and the flour mixture

  4. Mix in the mylk and acv, until a soft dough forms

  5. Briefly kneed on a floured surface, mixing in the raisins

  6. Flatten into 1/2 inch thick dough and cut with a cookie cutter

  7. Transfer to a baking sheet and brush with plant mylk

  8. Bake for 10-12 mins
