Taco Stuffed Peppers with Turkey and Salsa
Ingredients
- 3 bell peppers
- 1/2 onion
- 1/4 cup mushrooms
- olive oil
- 1 package ground turkey
- taco seasoning
- 1/2 cup salsa
- cilantro
- jalapeños
- avocado
Preparation
Cut 3 peppers in half and remove the seeds.
Preheat oven to 400F.
Add the peppers to a pan face up and bake for 15 minutes.
Heat a skillet over medium heat, add olive oil and sauté 1/2 diced onion and 1/4 cup mushrooms for 2-3 minutes.
Add a package of ground turkey, sprinkle with taco seasoning, and cook for 10 minutes.
Add 1/2 cup salsa and cook for another 2 minutes.
Remove the peppers from the oven, add the turkey filling, and return to the oven for 5 more minutes.
Top with cilantro, jalapeños, and avocado.
Tips
Adding salsa to the turkey filling improves texture and flavor.
