Taco Stuffed Peppers with Turkey and Salsa

Ingredients

  • 3 bell peppers
  • 1/2 onion
  • 1/4 cup mushrooms
  • olive oil
  • 1 package ground turkey
  • taco seasoning
  • 1/2 cup salsa
  • cilantro
  • jalapeños
  • avocado

Preparation

  1. Cut 3 peppers in half and remove the seeds.

  2. Preheat oven to 400F.

  3. Add the peppers to a pan face up and bake for 15 minutes.

  4. Heat a skillet over medium heat, add olive oil and sauté 1/2 diced onion and 1/4 cup mushrooms for 2-3 minutes.

  5. Add a package of ground turkey, sprinkle with taco seasoning, and cook for 10 minutes.

  6. Add 1/2 cup salsa and cook for another 2 minutes.

  7. Remove the peppers from the oven, add the turkey filling, and return to the oven for 5 more minutes.

  8. Top with cilantro, jalapeños, and avocado.

Tips

  1. Adding salsa to the turkey filling improves texture and flavor.
