Flavored Guacamole Chicken Tacos

Ingredients

Chicken

  • 1 lb ground chicken
  • 1 packet taco seasoning (@siete)
  • 1/2 red onion
  • Olive oil
  • 1/4 cup salsa

Mango Guacamole

  • 2 avocados
  • 1/4 cup finely diced onion
  • 1/2-1 tbsp chopped cilantro
  • Something for a little spice (jalapeño, chipotle powder, etc)
  • 1/2 cup finely diced mango
  • Sprinkle of salt
  • About 1/4 lime squeezed on

Taco Shells

  • Hard shell tacos or soft tacos (your preference)

Preparation

Chicken

  1. Heat a skillet over medium heat.

  2. Add olive oil and diced onion. Cook for about 5 minutes.

  3. Add ground chicken and taco seasoning. Cook and stir for about 5 more minutes, until it's no longer pink.

  4. Add salsa and let it simmer for about 5 minutes.

Mango Guacamole

  1. In a bowl, mash the avocados until desired consistency.

  2. Add finely diced onion, chopped cilantro, spice of your choice, finely diced mango, and a sprinkle of salt.

  3. Squeeze about 1/4 lime over the mixture.

  4. Mix everything together, excluding the mango.

Assembly

  1. Warm up the taco shells according to the package instructions.

  2. Fill each taco shell with a portion of the cooked chicken mixture.

  3. Top the chicken with a generous spoonful of the mango guacamole.

  4. Serve and enjoy!
