Vegan Red Velvet Breakfast Cupcakes

Ingredients

  • 2/3 cup oats, blended
  • 2 tbsp sugar/syrup/sweetener
  • 1 tbsp flaxseed
  • 1-3 tsp cocoa powder
  • 1/2 tsp each baking powder & soda
  • pinch of salt
  • 1/2 tsp vanilla

Preparation

  1. Mix the ingredients together until a smooth batter forms, you may need a splash more of milk

  2. Bake 12-15 mins in silicone cupcake cases

  3. Cool overnight (not in the fridge just on the counter)

  4. In the morning, remove from the cases

  5. Mix together

  6. Few tbsp vegan cream cheese

  7. Dash of maple syrup

  8. Ice the cupcakes and serve with some fruit
