Berry Date Bars

Ingredients

  • 1 cup almond flour
  • 1/2 cup raw walnuts, unsalted
  • 1 cup dates, with the pits removed, soaked in warm water for 15-20 minutes, then drained
  • 2 tsp coconut oil (substitute with nut butter)
  • 1/4 tsp salt
  • 1/2 cup dark chocolate or vegan chocolate chips
  • 1 cup freeze dried berries (substitute with any freeze dried fruit)

Preparation

  1. Line a 9 inch by 5 inch loaf pan with parchment paper.

  2. In a high-powered blender or food processor, combine the almond flour, walnuts, dates, coconut oil, and sea salt. Pulse until the ingredients have turned into a dough-like texture.

  3. Transfer the date mixture to the pan. Using your hands or a rubber spatula, press down the mixture into an even packed layer.

  4. Combine the chocolate in a microwave-safe bowl. Microwave for 30-second intervals, stirring between each one, until the chocolate has melted.

  5. Pour the melted chocolate on top of the date layer and spread it evenly. Sprinkle the freeze-dried berries on top.

  6. Place the pan back into the freezer for 15-20 minutes or until the chocolate has slightly hardened.

  7. Take the pan out and cut the bars into desired sizes. Place the bars back into the freezer for 20-25 minutes or until the chocolate layer has completely hardened.

  8. Immediately eat these bars or store them in the freezer until you are ready to enjoy them. Note that the chocolate will slowly melt if left out for a long period of time.
