Healthier Millionaire Shortbread Bars with California Dates
Ingredients
Crust
- 1 cup coconut flour
- 1/2 cup maple syrup
- 1/4 cup coconut oil
- 1/4 tsp vanilla
- Dash of salt
Caramel Filling
- 1 1/2 cup California Dates
- 1/4 cup peanut butter
- 2 tbsp dairy-free milk
- 1/4 tsp vanilla
- 1/4 tsp salt
Chocolate Topping
- 1/2 cup melted dark chocolate
- 3 tbsp coconut oil
Preparation
Crust Directions
In a large bowl, combine the coconut flour, maple syrup, melted coconut oil, vanilla, and salt.
Mix well until all ingredients are fully incorporated.
Press the crust mixture evenly into a pan using your hands.
Caramel Filling Directions
If your dates are not soft, soak them in water overnight or in hot water for 20-30 minutes before using.
Add the softened California Dates, peanut butter, dairy-free milk, vanilla, and salt to a food processor.
Blend the ingredients in the food processor until you have a smooth caramel-like consistency.
Spread the caramel filling evenly over the crust in the pan.
Chocolate Topping Directions
In a bowl, combine the melted dark chocolate and coconut oil.
Mix the chocolate and coconut oil until well combined.
Pour the chocolate mixture over the caramel layer in the pan.
Refrigerate the bars until the chocolate hardens.
Once the chocolate is firm, cut the bars into desired sizes and enjoy!
