Simple Vanilla Banana Pancakes with Caramelized Bananas

Ingredients

  • 2 eggs
  • 1 banana
  • 1 tablespoon ancient nutrition vanilla collagen
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • coconut oil
  • maple syrup
  • 1/2 banana for topping

Preparation

  1. Heat a skillet over medium heat.

  2. In a bowl, whisk 2 eggs.

  3. Mash 1 banana, leaving it a little chunky to help the pancakes hold together better.

  4. Add 1 tablespoon ancient nutrition vanilla collagen, 1 teaspoon cinnamon, and 1/2 teaspoon baking powder to the bowl.

  5. Mix all ingredients together.

  6. Add a little coconut oil to the pan.

  7. Spoon the pancake batter into the pan.

  8. Cook for 2-3 minutes on each side.

  9. For the topping, sauté 1/2 banana in the leftover coconut oil and cinnamon.

  10. Serve with maple syrup. This makes about 9-10 mini pancakes.
