Savory Sweet Potato Pancakes

Ingredients

  • 1 small mashed sweet potato
  • 1/4 cup coconut oil
  • 1 egg (or flax egg or vegan option)
  • 1 cup bone broth or nut milk
  • 1/2 cup almond flour
  • 1/2 cup chickpea flour
  • 1 tsp baking powder
  • cinnamon
  • salt
  • breakfast blend

Preparation

  1. Mix all ingredients together to form a batter.

  2. Spray a pan with coconut oil and heat over medium heat.

  3. Pour the batter into pancake rings on the pan.

  4. Cook for 5 minutes on each side.

  5. Optionally, melt vanilla ghee on top of the pancakes.
