Savory Sweet Potato Pancakes
Ingredients
- 1 small mashed sweet potato
- 1/4 cup coconut oil
- 1 egg (or flax egg or vegan option)
- 1 cup bone broth or nut milk
- 1/2 cup almond flour
- 1/2 cup chickpea flour
- 1 tsp baking powder
- cinnamon
- salt
- breakfast blend
Preparation
Mix all ingredients together to form a batter.
Spray a pan with coconut oil and heat over medium heat.
Pour the batter into pancake rings on the pan.
Cook for 5 minutes on each side.
Optionally, melt vanilla ghee on top of the pancakes.
