Bucatini with Soy Mince Bolognese Sauce
Ingredients
- 2 cups soya mince
- 3 cups water
- 1 tbsp olive oil
- 2 peppers, one red and one yellow
- 2 red onions
- 4 cloves garlic
- 1 tbsp red chilli flakes
- 1 tbsp salt
- 5 tins chopped tomatoes 400g each
- 2 tbs hot sauce
- 4 tbsp tomato puree paste
Preparation
Bring water to boil and salt the water generously, noting that most of it will be drained out.
Add the soya mince and cook for approximately 15 minutes or until the mince has absorbed most of the water and doubled in size, aiming for a slightly al-dente texture.
Drain and rinse with cold water.
While the mince is cooking, heat 1 tablespoon of olive oil.
Add peppers, onions, garlic, and red chilli flakes, and cook on low to medium heat for 7-8 minutes or until the onions and peppers have softened and are starting to take on some color.
In a blender, puree the tinned tomatoes, then add this to the saucepan along with the salt, tomato puree, and hot sauce.
Let the sauce simmer for 15-20 minutes or until it has turned a rich orangy-red color and any excess water has evaporated.
Add the soya mince to the sauce.
Mix with the spaghetti of your choice and enjoy.
