Chia Seed Breakfast Parfait

Ingredients

  • 2 tablespoons chia seeds
  • 50 ml almond milk
  • 1 teaspoon acai powder (optional)
  • 1 teaspoon haskapa powder (optional)
  • 130 g coconut yogurt
  • 10 g puffed buckwheat
  • Handful of fruit or berries
  • 1 tablespoon peanut butter

Preparation

  1. Mix chia seeds, almond milk, and optional superfood powders in a bowl; stir well and let sit for 15-30 minutes to form pudding.

  2. Layer the chia pudding with coconut yogurt, peanut butter, puffed buckwheat, and fresh fruit or berries in a glass or bowl to assemble the parfait.
