Rainbow Chia Seed Parfait

Ingredients

  • 8 tbsp chia seeds
  • 600 ml milk of your choice
  • 2 tbsp maple syrup
  • Fruit of your choice as topping

Preparation

  1. Soak 8 tablespoons of chia seeds in 600 ml milk of your choice for at least one hour or preferably overnight.

  2. After the soaking time, stir well to make the pudding soft and smooth.

  3. Sweeten with a little maple syrup, xylitol, honey, or brown sugar if desired.

  4. Decorate your chia pudding with fresh fruits such as pineapple, strawberries, blueberries, and coconut chips or flakes.

Colorful variations

  1. To make it colorful, mix the pudding in different cups or bowls with 1 teaspoon of powders like butterfly pea powder, blue ocean blend, pink pitaya, or matcha.
