Classic French Eclairs with Chocolate Glaze

Ingredients

Dough

  • 1 cup water
  • 1 cup flour
  • 100 grams butter or margarine
  • a pinch of salt
  • 1 teaspoon sugar
  • 3 large eggs (add one more if dough is not sticky)

Cream filling

  • 3 cups milk
  • 2 heaping tablespoons flour
  • 1 heaping tablespoon cornstarch
  • 1/2 cup sugar
  • 1 egg
  • 1 packet vanilla
  • 1 tablespoon butter

Topping

  • 2 packets milk chocolate

Preparation

  1. First, prepare the cream filling by cooking the milk, flour, cornstarch, sugar, and egg until thickened, then add vanilla and butter after removing from heat and allow it to cool completely.

  2. For the dough, bring water and butter or margarine to a boil in a pot.

  3. Add flour, salt, and sugar to the boiling mixture and cook for 3-4 minutes, stirring constantly.

  4. Remove from heat and let the dough cool completely.

  5. Once cooled, add eggs one by one, beating well after each addition until the dough is smooth.

  6. Pipe the dough onto a parchment-lined baking sheet.

  7. Bake in a preheated 160°C oven for 40-50 minutes without opening the door.

  8. After baking, turn off the oven, prop the door open slightly, and let the pastries cool inside.

  9. Fill the cooled pastries with the prepared cream filling.

  10. Dip the filled pastries in melted milk chocolate and let them set before serving.

Tips

  1. Do not open the oven door during baking to prevent the pastries from collapsing.

  2. If the dough does not become sticky and cohesive after adding eggs, add an extra egg.
